Bill’s tomato sauce

 

This is how to make Bill’s tomato and spinach sauce. It makes enough for two hungry people (300 gr pasta). You take an onion, slice it (very thin) from pole to pole. Heat in olive oil. Add one mild, finely chopped green chili, and one clove finely chopped garlic, 2 sage leaves and 1/2 tsp crushed rosemary, salt and pepper. Coarsely chop 7 – 9 medium sized tomatoes and add to the pot. Let it simmer – stir occasionally – for 1-3 hours (the longer the better!). Just when you put the water for the pasta to boil, add 7 handfulls of fresh spinach to the tomato sauce and cook. Take the sauce off the heat 3 minutes before the pasta is done, and let it sit and cool. Add another clove of finely chopped garlic and some basil. Drain the pasta, mix in the sauce, and serve.
